We´re proud of our striking Victorian building, and The Carlton´s rich heritage, but step inside the hotel and you´ll be surrounded in modern luxury. Recent investment in our hotel has seen 23 bedrooms being individually redesigned and carefully fitted out to a deluxe, four-star standard.


Rooms are contemporary and restful with soft greys and natural woodwork; underfloor heating makes for a cosy bathroom experience, whether showering or indulging in a bubble-filled bath.


They say the Devon air, whether rolling across the hills and fields or breezing in from the sea, makes everyone relax; but our crisp cotton bedding, throws and cushions along with sumptuous beds, also ensure a blissful night´s sleep. We´re equally proud of our other unique rooms which vary to suit all budgets. Whether Classic or Superior, they all include modern comforts like flat screen TVs, ensuite bathrooms and welcome trays.

Our newly refurbished brasserie is the perfect setting to enjoy a meal, freshly prepared in our kitchen using some of the best local produce around.


We love to find new suppliers, whether they´re Devon families who´ve been growing, rearing or selling produce for generations or new, artisan makers of craft food and drink products - of which there are many in county. We were thrilled to discover Crediton Coffee Company, specialist bean roasters, Madrigal Brewery over in Lynmouth; then there´s Ivan Clarke the butchers´ in town or Farmer Bob from Barnstaple, who supplies the freshest eggs.


Being so close to the sea, fish is of course a highlight and we take care to source only the freshest, sustainably caught North Devon fish through Passmores fish merchant.


Breakfast includes all the light buffet options, to full English breakfasts including thick cut bacon and Exmoor pork sausage, our famous bacon or sausage sandwiches and not forgetting kippers and poached haddock – with those wonderful Farmer Bob eggs.


Above all, we like you to feel relaxed when dining so you can enjoy traditional favourites as well as more specialised options, from steaks and burgers to curries and veggie risottos – but do make sure you leave room for one of our classic desserts.
